Det beror p&aring; att allergenens h&ouml;gsta koncentrationshalt finns i skalet, eller strax under det. Allergenen &auml;r dessutom ofta v&auml;rmek&auml;nsliga, d&auml;rf&ouml;r t&aring;l m&aring;nga att &auml;ta frukt i tillagad form, exempelvis &auml;ppelmos.
