Here are few tricks to avoid falling into traps and urban myths how Italians eat and cook pasta:
* Do not add oil to the pasta cooking water. It makes the pasta slippery and unable to ”hold” the sauce well.
* Do not cover the pot when cooking pasta.
*Do make sure the salt is properly dissolved before throwing the pasta into the water.
* Do drain the pasta well: it should be moist, not dripping wet.
* Do not rinse the pasta after cooking, unless it is for a cold salad.
* Do not swamp the pasta with too much sauce ( a reminder to lots of Swedish ppl who loves sauces) , you need to be able to taste the pasta as well…. Here pasta is a cultural thing.
* Do add a little of the pasta cooking water to your sauce if its a little on the dry side.
